These French casks previously held the aperitif Pineau and they add new layers to those created by the American Oak casks the whisky starts out it. The whisky is honey sweet and cakey, with vanilla, squishy stone fruits and hints of toasted nuts thrown in, but there’s also something a little different – something fresh, bright and floral and too complex to pinpoint exactly. It’s a top notch whisky with a subtly interesting twist. Touring the distillery we were shown the original malting floor, which is no longer used, and the original malting ovens, also no longer used but they can’t do anything with them as Historic Environment Scotland says they can’t touch them or remove them so they can’t use the building for anything else. Nose: When first putting my nose to the glass, I was hit with a rush of what seemed like spring in whisky form: bright, acidic, and tart, dominated by lemon and oak with an undercurrent of floral notes.
