Our Cotswolds Cream Liqueur is made by mixing our new make single malt spirit with fresh Irish cream creating a wonderful rich liqueur. Unfiltered to preserve the essential oils from the botanicals, a pearlescent haze forms when ice or tonic is added. Mentors include Harry Cockburn, a man with 45 years experience in the art of distilling including 20 years spent at the Bowmore Distillery on Islay, and Dr Jim Swan who advises countless distilleries around the world including Penderyn in Wales. Juniper, coriander and angelica root are macerated in pure wheat spirit overnight to fully infuse the flavour. Cotswolds Distillery claims to use 10 times the average volume of botanicals to create its gin, yielding a high proportion of flavoursome essential oils.The expression of the traditional London dry style comes from the maceration into their pure wheat spirit of juniper, coriander and angelica root, which have been left for 12 hours to allow the flavour characteristics to fully infuse. That high oil content comes into play on the mouthfeel too and at 46%, it’s smooth enough to sip neat.
