The food colouring world is an absolute minefield, and I don’t blame anyone for a being a little perplexed as to which brand to buy! This buttercream can be made weeks in advance and stored in the fridge until you’re ready to use it. Whether you’re making a cake for Christmas, Valentine’s Day or an Angry Birds cake, I hope these tips help you make the brightest, most delicious red buttercream!!

Below are the most important tips I learned while testing out what ingredients and methods work best for making bright red frosting. Use The Right Type of Food Coloring although not necessarily present in this particular product, the colours used across theentire icing colouringrange may include the coloursE102, E104, E110, E122 & E129 - which may have an adverse effect on activity and attention in some children Allow each layer to cool completely before moving onto the next step. This will give you nice clean layers. You can freeze the sponges either alone, or decorated. Once the sponges are fully cool, wrap them well with cling film or put them in an airtight container with some baking paper between them. You can freeze the buttercream on it’s own in a tub, or you can decorate the cake and freeze it fully assembled. To do this and avoid damage to the decoration, freeze it either in an airtight container. Or let it freeze solid on a cake board or plate, then wrap in cling film. Remove the cling film when you take it out to defrost it, if you don’t it could damage the decoration as it defrosts and softens. You can also freeze slices of the cake, again well wrapped in cling film or in airtight containers. Can you make the cake with plain/all purpose flour?

If you make the frosting a few days (or more) in advance, the color of the frosting will deepen over time. Allowing the buttercream to sit out at room temperature (usually as it thaws) is what really deepens the color. Read through the whole recipe before you begin. Sounds really simple but not doing this has tripped me up on more occasions that I care to admit! Spare yourself any nasty surprises. I love the pink from the colour splash set and used it on the drip for my rainbow cake– and it made such a vibrant and beautiful pink colour with so little added to the ganache! Avoid The Bitter Taste Add in a generous squirt of red gel food coloring or about a 2 tsp of powdered red food coloring once the frosting is fully made, and beat on low until it reach the desired colored. I prefer to use a baking spread like Stork for the cake, and unsalted butter for the buttercream as I find they provide the best results. I tend to gravitate more towards oil-based colours as they tend to incorporate better into any bake, but you will see below what I mean. I like to use the super red shade when making red buttercream. Alternative Food Colorings While we’re on the topic, I have one important piece of advice around making frosting in advance. As buttercream sits and/or thaws, it usually gets tons of tiny air bubbles in it! Heat in 10 second intervals, stirring after every time, until two thirds melted. Can this cake be made in different size cake tins?

Flour: You need regular plain/all purpose flour for this, don’t use self raising as it has raising agents in it which we don’t want in a brownie. Make your frostingahead of time or save any leftover frosting! It can be stored in an airtight container in the fridge for up to a month, or in the freezer for up to 3 months.
