About this deal

For hundreds of years it has been made in the same manner, adding 5 panniers (puttonyos) of 25 kg. each, containing noble Aszú berries to a "Gönc" barrel (136 litres) of base must. The Tokaj region has 5,500 hectares of vineyards and 27 towns and villages. It’s a white wine region best known for its sweet aszú wines, which are made from botrytized grapes, but more than half of the wine it produces is dry. Six grape varieties are permitted to grow in Tokaj. The superstars are the indigenous varieties Furmintand Hárslevelű, with Furmint being the high profile grape that tends to steal the show. Other varieties grown in smaller quantities are Sárga Muskotály, Kövérszölö, Zéta (a crossing of Furmint and Bouvier), and Kabar (a crossing of Hárslevelű and Bouvier). All of these varieties can be used in aszú. A few other grapes are grown in very small quantities (though they aren’t allowed to carry the name Tokaj on their label), such as Pinot Noir. The Tokaj region lies within a range of mountains in north-eastern Hungary. The Oremus winery is located at itsgeographical centre. The sweetness of Tokaj aszú has traditionally been measured in puttonys. A puttony is a 25-liter wooden tub, which was used for harvesting the aszú grapes. The most prized types of Tokaji aszú were made as either a five puttonyos version or a six puttonyos version, which means that the equivalent of five or six tubs of botrytized grapes had been added to each cask of must or base wine. (In Tokaj, aszú is made in 136-liter Gönc casks). So the higher the puttony number, the sweeter, more golden colored, and more expensive the wine will be. (For a more concrete idea of the sweetness level, a three puttonyos aszú had from 60 to 90 grams of residual sugar per liter, a four puttonyos had from 90 to 120, a five puttonyos from 120 to 150, and a six puttonyos from 150 to 180.) The Tokaj legend has grown and grown in its four-hundred years of history, but it was not until 1630, when thegreatness of Oremus vineyard was first spoken of. ASZÚ 5 puttonyos 2014 is a bright golden colour and has the characteristic aromas of ripe apricot, honey, andcitric nuances of grapefruit. It is complex and rich with a refreshing finish, typical of a classic sweet Tokaji wine,without forgetting the acidity perfectly balancing the sweetness. Six Puttonyos Tokaji is more about gorgeously luscious sweetness, although acidity still comes into play so that the best wines are never cloying. Try matching these wines with full-flavoured blue cheeses or varying types of paté. The grapes are macerated for 12-24 hours until they swell, before being gently pressed. Fermentation takesplace in new Hungarian oak barrels. It is a slow process that can take up to one month.

Grand Tokaj is the largest winery in the Tokaj-Hegyalia wine region and consists of 67 hectares of vineyards and a huge ancient underground cellar where Chief Oenologist Károly Áts works his magic each year. From the 2013 harvest the new regulation requires minimum 120 g/L residual sugar in every Aszú wine. The producer still may use the puttonyos number on the label. The objective with Aszú 5 Puttonyos wine is to achieve the best balance between acidity and sugar that wecan obtain from the vintage. In this sense, it is a perfect wine for ageing to savour during vertical tastings. Theamber colour indicates the high level of noble rot infection in this 2016 harvest. The honey and fruity fragrancesare delightful and the acidity on the palate is a sign of outstanding ageing potential.

After a mild and dry winter, we had a long spring with warm days and cool nights. The flowering season was unusually long and there was an uneven fruit set in many vineyards due to some late spring frosts. The wine called Eszencia is a wine made entirely of Aszú berries. The grape must for Eszencia is so sweet, it’s practically syrup, making it very difficult for yeast to ferment sugar into alcohol. The number of “puttony”-s indicates: the amount of Aszu pulp (1 puttony: 20-22 kg) that is soaked in one Gönc barrels (136-140 l) must. In Tokaj the harvest is a long, labor-intensive process that begins at the end of August and usually ends in November (though harvesting aszú berries into January isn’t unheard of). There are essentially three types of harvests in Tokaj: the dry wine harvests, the aszú harvest, and the szamorodni harvest.Aszú berries are macerated for two days until swollen, followed by a gentle press. Fermentation takes place innew Hungarian oak barrels; a slow process which can last up to two months. Citrus, peach and apricot aromas characte rize the nose of this Aszú 5 puttonyos 2013; Rich, intense on the palate with a long aftertaste of orange blossom and spices. Only 14 vintages of the Royal Tokaji Red Label 5 puttonyos have been produced since its premier release of the 1990 vintage. Since then, the Red Label has been made in 1991, 1993, 1995, 1996, 1999, 2000, 2003, 2005, 2006, 2007, 2008, 2009, 2013 and 2016. This wine is a blend of carefully selected grapes from several of Royal Tokaji’s first and second growth vineyards. Spray with a little water using a fine spray to just dampen the sugar – then use a blow torch to caramelise it. To begin with, Royal Tokaji decided to focus on producing single vineyard wines made from 1st and 2nd growth vineyards only. The objective was to remind people that Tokaji is, like Burgundy, among the world's great wine regions that recognise and demonstrate the importance of terroir and also to focus on the top end of the market. The wines were made in a traditional manner, with extended extraction and barrel ageing to add colour, richness, aroma, and complexity to the wine.

These wines are a true labour of love, and are also some of the world’s greatest sweet wines. In early 2017 the Royal Tokaji Co. winemaking team went into the cellars to properly assess all of their Aszú wines from 1990-1999, their First Decade. Every single bottle has been opened and tasted. Every perfect bottle was saved and overall approximately 15% of the bottles were rejected. Each wine was then rebottled at the winery under new corks. Provenance is unquestionable, the wines having never left the Royal Tokaji cellars. Every wine has been tasted and approved by their winemaker and General Manager. Since the fall of communism in the late 1980s the Hungarian wine industry has garnered foreign and local investment and adopted modern technological and viticultural practises to improve the quality of the wines.
