You can’t bake an Authentic Detroit Style Pizza without a square steel pan fashioned after the automotive parts trays originally used when the “Motor City Secret” was born, but authenticity comes with a costly and time-consuming break-in period. Not anymore. World Pizza Champion Shawn Randazzo has developed a revolutionary new seasoning process that eliminates the break-in period so pizzerias can save time and money with a more durable pan that’s uniquely suited for baking Authentic Detroit Style Pizza. After 30 minutes have passed, reach into the vessel and pull the dough up and into the center. Turn the vessel quarter turns and continue this pulling 8 to 10 times. Let the dough rest for another 30 minutes; then repeat the stretching and folding. After these two sets of stretches and folds, you should see a difference in the texture of the dough: it will be smoother, stronger, and more elastic. As noted above, this is great for convenience — it’s so nice having a nearly assembled pizza waiting in the fridge — but it’s also beneficial for the dough: the longer dough ferments, the more gas bubbles are produced, and when those gas bubbles hit the hot oven, they expand, creating a light, porous crust. My introduction to Detroit-style pizza came not by way of Detroit’s legendary Buddy’s Pizza, but rather from Matt and Emily Hyland, the couple behind Pizza Loves Emily, whose New Haven-style pizzas are near and dear to my heart, and whose Emmy Squared slices now follow close behind.

Once the dough has fully risen, stretch it up the sides of the pan. To do this, coat your fingers in olive oil and gently pull the dough. Make sure to spread the cheese all the way to the edges of the pan to create that crispy crust that Detroit-style pizza is famous for. You can reheat leftover pizza in the microwave, but it is really best to do it in the oven. Heat the oven to 350 degrees F and place slices on a baking tray. Mist lightly with water and cover loosely with foil. Heat for 15-20 minutes and enjoy!
