About this deal

The 2011 Sauternes Cask was first aged for over seven years in oloroso sherry butts and bourbon barrels and then in rare Sauternes wine casks for two years. The French casks that have housed this sweet white wine from the Sauternais region of Bordeaux bring an abundance of delicate summer fruit flavours and fresh grapes. Stephen James Smith is a Dublin poet and playwright central to the rise of the vibrant spoken word scene in Ireland today. To date, his poetry videos have amassed over 1 million views online. Stephen has performed his poetry at high profile events and festivals around the world. His work has been translated into Irish, Spanish, Slovenian, Polish, Dutch and Italian. Nose: Harmonious - rich, sweet and woody. Very fruity - bananas foster and french toast. Cinnamon, caramelised brown sugar and vanilla ice cream. Now the tropical fruit notes of pineapple, mangos and fresh apricots. A definite cherry note too with a hint of eucalyptus. Dark chocolate with dried fruit and orange zest. Water brings out a little more nuttiness - crushed walnuts with marzipan making an appearance too. These expressions also just highlight to me how well Bushmills spirit goes with fortified wine casks. Bushmills solely done in bourbon casks even at cask strength never really got my juices flowing but show them some sherry, madeira, port or malaga wine and it bursts into life. All of these exceptional, non-chill-filtered whiskeys have been matured in oloroso sherry butts and bourbon barrels before undergoing unprecedented finishing in diverse casks among which new American oak, Sauternes, cuvée and cognac feature this year. The expression is bottled at cask strength (52.1% ABV) and is non-chill-filtered. The whiskey offers notes of crème brûlée, cinnamon spice and tropical fruits. The sensational whiskeys in the Causeway Collection deliver bold, untold waves of flavour that pay homage to the heritage and natural landscape of Bushmills. We are delighted to share these very special innovations for whiskey lovers throughout Ireland.”The 2010 Cognac Cask is a limited-edition cask strength, non chill-filtered single malt that has spent seven years maturing in OIoroso sherry butts and bourbon barrels before being finished in fine cognac casks from the Charente region in France for a further five years.

This year’s collection, the third in the series, is the first to be unveiled by Bushmills Master Blender, Alex Thomas. Someday that journey you promised to make will start today. Bushmills Irish Whiskey has unveiled two expressions from its 2023 Causeway Collection which will be available exclusively on the island of Ireland. This is a sensational whiskey which we tasted two years ago and laid down again to allow the magic of the cask infuse the whiskey, and the result is truly exceptional. The years have intensified the cognac’s Ugni Blanc grape aromas, resulting in a single malt bursting with ripe pear and buttery honeycomb with layers of deeper cinnamon spice, leather and dried fruits.”
