About this deal

Set rice cooker to white rice function (if it has one) and cook. Fluff with fork and sprinkle with sumac to serve. The temperature you cook at impacts the overall cooking time, so it’s a bit of a guessing game for the first one you make. If you think of the heat of your hob on a scale of 1-9, you want to aim for a 3. The cooking can take anywhere between just over an hour and an hour and a half. The pot is then lifted up which will present a golden crispy layer on the top of the rice that is everyone’s favourite part! In this recipe, I've also shown you how to make crispy Tahdig using flatbread this time! It's the best part of the dish we all fight over hehe 🙂

Cook the tahdig. To really trap the steam, do as my Persian friends do, wrap the lid of the pot in a thin kitchen towel. Use a rubber band to secure the towel around the handle (a little safety measure). Cover the pot and cook over low heat, 25 to 30 minutes or until the rice around the edges is golden and crispy (mine took more like 50 minutes for the bottom layer to fully crisp up and fully develop the golden color you see. I also ended up raising the heat a little bit to medium-low for a bit). Keep an eye and peek under the lid to make sure the bottom layer crisps nicely but does not burn (this is really all the TLC you need to do and it makes a difference). Even thou the Persian rice cooker is bigger than Pars Khazar rice cooker, it’s quality is the same. In both of the cookers, you can make rice crust. You can easily make delicious rice for your whole family.Add about 1 tbsp of canola oil. You can use butter instead of oil if you want. Just do not use olive oil. Sabzi Polo is a traditional Persian Herb Rice dish made with rice and a variety of fresh herbs which tastes and smells incredible.

We do have many different versions of Persian rice dishes such as Sabzi Polo which is layered with fresh herbs. In other dishes we use yogurt for the base and saffron, and sometimes we top it with sliced pistachios or almonds. In this recipe, I'll be showing you the classic version which we use as the base in our cooking.
